* 2 plum tomato chopped
* Cilantro, raw, 4 tbsp chopped
* Olive Oil, 2 tbsp
* Salt and pepper to taste

Here is how you make Stewed Pinto Beans:

1. Cook Pinto beans according to package directions. Drain and reserve two cups of bean liquid. 2. Heat olive oil in a skillet using low to medium heat.3. Saute minced garlic in olive oil until golden brown, then add chopped onions and saute until onions are translucent.4. Add chopped plum tomatoes and saute for about 1 minute breaking up tomato, reduce heat to low, cover and simmer until mixture is liquefies, mixing it occasionally. about 7-10 minutes.5. Add chopped green bell pepper and cook until tender, then mix in chopped cilantro. Cook for another 2 minutes then add salt and pepper to taste.6. Add cooked beans, saute in mxiture for about 1 minute then add reserved liquid. If too watery, mash some of the beans when mixing the stew.
