Here is how you make Quinoa, Veggies and Black Beans:

In pot with lid put 1 cup of quinoa and 2 cups of water. Bring to a boil. While pot is coming to a boil, chop fresh veggies: 3/4 cup tomatoes, 1 cup scallions, 1/2 cup onions, 1/2 cup mushrooms, 1 cup red peppers. Measure out 1 cup of pre-cooked black beans and chop 1 garlic clove. Once pot reaches boil, turn down heat to simmer and add spices (1 tsp sea salt, 1 chopped garlic clove, 1 tsp Cumin powder and stir. Next add all veggies and beans to pot, do not stir, cover and simmer until Qunioa is done, about 10-12 minutes. This will allow the veggies to steam. Serving Size:?Makes 8 - 1 cup servings
