Cook veggies with a TBLS of water in covered non-stick skillet. When vegetables have almost reached desired doneness, remove lid and allow water to steam off. Meanwhile whip together eggs and milk, then poor into pan. Allow to cook on med-low heat, scraping pan occasionally. Steam tortillas in damp towel in microwave for 20 seconds.
