Preheat oven to 375. Mix wet ingredients in a large bowl. Mix dry ingredients in a small bowl. Combine dry into wet ingredients. I use my stand mixer till combined. Scoop 2 tablespoon size portions, roll into balls and place on prepared cookie sheet. I use silicon sheets. Put more pb2 on your hands if mixture is sticky. Flatten cookies. Bake for 6 minutes on the bottom rack, then bake on top rake for 6 minutes. Cookies will be golden brown, but soft in the center.
