1.5 cup diced red-skinned potatoes, skin on
1 cup button or crimini mushrooms, quartered, stems trimmed
1 cup zucchini, diced
1/2 cup diced red bell pepper
1/2 cup diced onion
2 tbsp sliced green onion
1 tsp (or 1 whole clove) garlic, chopped fine
4 egg whites, beaten
1 cup fresh spinach
1 oz shredded Asiago or Parmesan cheese
Sea salt
pepper

Here is how you make Healthy Breakfast Skillet:

heat oil in skillet.Add potatoes and fry. Let brown individually.While potatoes are cooking, in a separate skillet, cook the egg whites with a little butter-flavored cooking spray.Set eggs and potatoes aside and sprinkle potatoes lightly with sea salt and pepper.add onion and bell peppers to skillet and saute for 1 minute or until onions are translucent.add zucchini, mushrooms, and garlic and sauteAdd spinach and potatoes and combine till spinach is wilted.To plate:put half of the potato/vegetable mixture on a plate.Place half of the egg whites on top of the mixture.Top with green onion and cheese.season to taste.pairs very well with fresh fruit.Serving Size: Makes 2 servingsNumber of Servings: 2Recipe submitted by SparkPeople user ABELLOWS7.
