Here is how you make Greek Casserole:

Peel the eggplants and slice about 1/4 inch thick, then roast at 350 for 8 minutes on each side.Thinly slice the potatoes and do the same. In a casserole dish, put down a bottom layer of tomato sauce, then a layer of eggplant, tomato sauce, potatoes, lentils, and then cheese to finish. If you have enough to keep layering, layer again, but make sure you finish with the cheese on top. Bake at 350 for 30 minutes and serve!
