2 cups rice, either white or brown
4 teaspoons Better than Boullion mushroom soup base
3 cups fresh mushrooms, sliced or diced
1 cup chopped celery
1 cup chopped onion
2 cups grated or chopped carrots
1 tablespoon vegetable oil
3 tablespoons butter
3 tablespoons white flour
3 cups 2% milk
1 cup grated parmesan cheese


How Do I Make Cheesy Mushroom Casserole?

Here is how you make Cheesy Mushroom Casserole:

Cook rice according to package directions, adding mushroom soup base to rice water and stirring well at beginning. Meanwhile, Saute onions, celery, mushrooms, and carrots in oil over medium heat until tender in covered skillet. Make a white sauce as follows: melt the butter in a 2 quart saucepan over medium heat. Add flour, and mix well. Slowly and gradually add milk, while whisking or stirring continuously over medium low heat. Do not let the mixture come to a boil. When sauce begins to thicken, gradually add cheese, and continue stirring to incorporate. Keep stirring continuously over medium heat until sauce thickens and becomes very hot, but not boiling. In large mixing bowl, mix all ingredients, pour into 9" x 12" pan that has been sprayed with cooking spray. Sprinkle additional parmesan cheese on top.
