2 yellow onions
2 tbs vegetable oil (to sautee onions)
1/2 package frozen spinach
1/2 cup frozen peas
Vegan breadcrumbs
Salt and pepper to taste

Here is how you make Vegan Casserole:

Preheat oven to 375 degrees.Cook pasta in a big pot until al dente. Drain and set aside.In a small pot, bring 3 cups soymilk to a boil. Add spinach and peas, lower heat, and leave to simmer until spinach is cooked.In the meantime, finely chop 2 yellow onions. Put 2 tbs oil in a saucepan, add onions, and sautee for 2 minutes. Stir in the flour, then add in the milk and vegetable mixture. Add salt and pepper. Stir until creamy.Put pasta in a casserole dish and pour cream sauce over. Sprinkle vegan breadcrumbs on top.
