Here is how you make Breakfast Casserole with cheese:

Preheat oven to 350 degrees. Cook turkey bacon per package directions and chop into bite size pieces. Cook spinach per package directions and drain out any water. In a bowl mix all ingredients except bread. In an 8 x 8 pan (or whatever you have available) lay bread on bottom of pan. Pour mix on top of bread and make sure bread is covered. Put in preheated oven for 40 minutes or when you put a knife in the center and it comes out clean. Slice casserole and when cooled can be covered with aluminum foil and put in freezer.
