1/2 c. La Victoria Enchilada Sauce
1 1/2 c. tomato sauce
1/2 large onion, minced
1/2 c. olive oil (about half will get patted off tortillas)
12 corn tortillas


How Do I Make Cheese n Onion Enchiladas?

Here is how you make Cheese n Onion Enchiladas:

Mix tomato and enchilada sauces. Put some in the bottom of a baking pan. Gently fry tortillas in oil. Hang with tongs and let oil drip off. Pat dry with paper towels. Dip tortillas in remaining sauce one at a time. Lay one flat in pan and fill with a small amount of cheese and onions. Roll and push to edge of pan. Repeat with each tortilla until all are used. Sprinkle remaining cheese, sauce and onion over top. Bake @ 350-375 until cheese on top is melted and turning golden brown.
