I stuck with salt,pepper,garlic powder, dried basil, and dried oregano]Dip in egg wash, let excess drip offDip in Panko, press down to make sure coating sticksHeat about 1/4 inch of vegetable [or any oil you choose] in a large skillet to medium (6 on my stove)Once oil is warm/hot add eggplant pieces.
