Here is how you make Basic Potato and Cheese Piergoies:

Mix cheese into mashed potatoes, set aside.Beat eggs, water and salt together.Knead in flour until firm and well mixed.Let rest for at least 10 minutes.On a well floured surface roll out half the dough until it is about 1/8th inch thick. Use a biscuit cutter and cut out circles of dough.Place about 1/2 tsp of filling in the middle of each circle, press shut, using water to dampen the edge if it won't stick together.Cook pierogies a few at a time in rapidly boiling, salted, water; until they float to the top.Remove from water and place on a cookie sheet that has been sprayed with Pam. After the sheet is full, place in freezer for 1-2 hours until pierogies are frozen.
