Spread 1-1/2 tsp. mustard on inside of each slice. Top mustard on one slice of each sandwich with 4 slices of cheese, 1/4 of the zucchini, 1/8 cup spinach, and 1 Tbsp. onion. Top with remaining bread slices (mustard side facing in). Brush outside of each sandwich with 1 tsp. olive oil (1/2 tsp. per side).Preheat large pan on stove over medium-low to medium heat, depending on your stove. Place sandwiches in pan.
