The ingredients for Light Cheesy Noodles are:

Cook 1 lb of Yolk-Free Whole Wheat Noodles

While it is boiling, bring to a simmer - watching continuously:
1/2 c. Vanilla Soymilk
2 c. Ultra Skim Milk
1/2 tsp. dry mustard
When hot, add 2 c. low fat (2%) shredded cheddar & 1 oz. processed cheddar spread to add flavor & creaminess
Melt cheeses stirring constantly, add white pepper & salt to taste.

Make a slurry with 2 Tb. of Corn Starch and 2 Tb. Water.
Quickly stir into your sauce - you might want to raise the heat a little - until thickened. optional: bit of hot sauce

Drain noodles, place back in the pot. Mix with the 1/2 c. reduced fat sour cream. Then mix the thickened sauce into the noodles & sour cream. Stir well & taste for salt/pepper/hot sauce.

Optional: Bake for half hour at 350 deg.
