Here is how you make Cherry Pancake:

Preheat oven to 400. Heat butter in oven-proof skillet. Add cherries and simmer 3-5 minutes so liquid will thicken. Mix egg whites with electric mixer until stiff peaks form.In a separate bowl, whisk the egg yolks for 1-2 minutes by hand with vanilla and cinnamon. Fold yolks into whites. With the heat under fruit at medium, spread egg batter on to of the fruit. Cook 2 minutes without touching, then transfer the pan to the oven. Bake 10-12 minutes until the batter is puffed and slightly browned. Remove the pan from the oven.
