Add onions and saute for 1-2 minutes alone, then add the carrots, celery and garlic. Cook these until they soften up, 5-10 minutes, while stirring frequently. Add the cans of tomatoes and the drained, rinsed beans. Stir and continue to add the corn and the spices. Add more chili powder if you like it spicier. Continue cooking for about 25 more minutes or until the flavors have combined well. Taste and add more seasonings if needed. For added flavor, put some shredded cheddar cheese on top when serving.
