1 can chickpeas, rinsed and drained
1/2 cup bread crumbs
2 tablespoons cornmeal
1/2 teaspoon salt
1/4 teaspoon cayenne or red pepper
1/4 cup cornmeal


How Do I Make Chickpea and Corn Patties?

Here is how you make Chickpea and Corn Patties:

Saute onion in a small amount of water and add thyme. Cool slightly. Combine onion mixture, chick peas, bread crumbs and 2 tablespoons cornmeal, salt and cayenne in a food processor. Pulse 8 times or until combined and chunky. Divide mixture into 8 equal portions, shaping each into thick patties. Dredge patties in 1/4 cup cornmeal. Heat 1/2 teaspoon oil in a skillet (or spray the pan well) Add patties and cook 5 minutes. Carefully turn patties over and cook 4 minutes or until golden. Serve with sour cream and salsa if desired.
