Here is how you make couscous:

Peel the sweet potato. Peel the squash if desired. Roughly chop the sweet potato and the squash into cubes about 1" to 1.5". Peel and dice the onions; brown them in the olive oil. Fill a 6 quart slow cooker as follows: sweet potatoes, carrots, celery, onions, squash, and parsley. Season with salt, pepper, cinnamon, and coriander. Pour in the vegetable or chicken stock.
