2 TBL fish sauce
2 TBL brown sugar
3 cups vegetables (snow peas and carrots)
1/2 cup chopped fresh basil

Pat tofu dry with paper towels. Dredge in flour and shake off excess.Whisk eggs.Heat 2 TBL oil in skillet.Dip dredged tofu in egg, add to skillet.Brown, turning (about 8 minutes)Remove tofu to plate.Add 1 TBL oil and curry paste to oil left in skillet and cook, stirring about 1 minute. Whisk in coconut milk, fish sauce, brown sugar.Simmer sauce about 8 minutes.
