Spray non-stick pan w/Pam type spray.Put all ingredients - except Egg mixture - into pan - cook until onions are soft - about 2 minutesScramble egg & egg white.When veggies are soft pour egg mixture into pan and stir up - or just let it become a "pancake" type.When done put on plate and top w/Salsa - it's add a little "zing", since I don't use salt it works for me...
