Combine egg whites, water, and pepper in a bowl and whisk well. Set aside.Heat the coconut oil over medium-high heat. Turn the heat down to medium and add your veggies. Saute until done and then remove from pan.(Note: The coconut oil is what makes this omelet! I *love* coconut oil! I use it on a lot of things, it adds a LOT of flavor! Just use sparingly as it is high in fat.) Pour egg whites in heated pan. Cook over medium/medium-low heat without touching until the top of the eggs are firm. Add your veggies to the center of the eggs, reserving a small amount for garnish. Fold the sides over into an omelet.Remove from pan and garnish with the reserved veggies and the grated parmesan cheese. Here's the unusual part -- the omelet is quite tasty as is, but if you like garnish or dip like salsa or ketchup with your eggs, try cocktail sauce! YES, like you use with shrimp! I read this somewhere and tried it, and holy cow it's amazing! A little sauce goes a long way to add to the flavor of your omelet without additional calories.
