Here is how you make Eggplant Sandwiches:

Cut eggplant into 8 slices, about 1/2" thick. Arrange in a single layer on a tray and sprinkle with salt. Stand for 20 min; rinse under cold water and pat dry with paper towels. Preheat oven 425. Brush shallow baking pan with oil. Lay 4 slices of prepared eggplant on pan; brush with oil. Spread Ricotta onto each slice; top with a slice of tomato and some basil. Place another eggplant slice on each stack, making a "sandwich." Brush lightly with olive oil; sprinkle with combined Parmesan and bread crumbs. Bake 20 min, until eggplant is tender and golden.
