Prep the onions and green pepper while the frying pan is warming up. Spray pan with cooking spray. Cook onion, mushrooms and green peppers to desired tenderness. While vegetables are cooking, tear bread and cheese into 1 inch size pieces, set aside.Beat eggs (add a little water for some fluff), and add to the vegetables and immediately add the bread and cheese (the pan will be good and warm so the eggs will cook fast!).
