Chicken Broth, 2 cup (8 fl oz)
Scallions, raw, 1 cup, chopped
Onions, raw, red, 1 cup, chopped
1 tsp cumin
1tsp Mexican oregano
Salt and pepper
Collard greens, cooked, boiled, drained, with salt, 4 cup, chopped
Ricotta Cheese, part skim milk, 16 oz
Flour Tortillas, 7 tortilla, medium (approx 6" dia)
Mozzarella Finely shredded Part Skim cheese, 4 cup

Here is how you make Green Enchiladas:

Saute chilies, onions and spices for ten minutes add broth and simmer for ten minutes. Combine collards with ricotta and 2 cups mozzarella. Blend the sauce mixture and pour half into the bottom of a 9X11 pan. Overlap 3 tortillas on the bottom of the pan. Spoon greens mixture over top, cover with the remaining tortillas, then cover with the other half of the sauce. Add the remaining mozzarella over top.
