Place in oven to roast; this will take from 40-60 minutes depending on the size/starchiness of your beets. Remove when easily pierced by a fork and peel (skins should slip off after roasting; if not, cook for a bit longer). Cut beets into bite-sized pieces; set aside.Heat 1 tsp olive oil in a skillet. Add onions; cook until caramelized. To onions, add minced garlic; cook for a minute or so, then add cleaned and chopped beet greens. Cook until greens are tender, but not mushy; remove from heat.Prepare vinaigrette by whisking together mustard, olive oil, and vinegar. Pour desired dressing amount over greens; toss.
