Soyrizzo is usually sold in the produce section or the refrigerated section of the organic stuff. It is along side the other "mock meats". It is a WHOLE lot better for you than real Mexican Chorizo.

one lbs of small potatoes like fingerlings, scrubbed left skin intact

an onion diced

garlic crushed or diced according to your tastes. I use 6 for a strong flavor

colorful peppers diced. I use 2 for one pot of this hash.

Olive oil, enough to coat the bottom of your deep skillet or soup pot.

Salt, pepper, cumin, cayenne, and whatever other spices you want added to taste.

Here is how you make Soyrizzo hash:

Makes 8 servingsboil the potatoes until firm tender, definitely NOT soft. take of the heat and drain the potatoes. set them aside to cool a bit. If you are in a hurry for dinner, plunge them into some cool water OR because you'll cut them into bite size pieces before pan frying them with the chorizo. You could cut them up before you boil them but I tend to forget to do that.While the potatoes are cooking or cooling, chop up the onion, peppers and garlic. put the oil in your pan, and saute the peppers, onion until they are soft.add the potatoes and let the whole thing set without stirring for a couple of minutes so that the potatoes get a little brown on the sides. Add the chorizo and garlic to the pan and fry stirring enough to keep it all from sticking to your pan.Add any spices you think might improve the dish. I usually add a hefty shake or two of cumin and a little bit of cayenne if I didn't add a hot pepper to my bell peppers earlier.The chorizo caramelizes a bit as it cooks for a yummy crusty effect.I plan on putting a fried egg on mine tonight.
