Here is how you make Sarah's Italian Lentil Loaf:

Cook lentils with seasonings until soft.Drain and cool, then mash slightly.Dice carrots, onion, and 4 garlic cloves; add to pan and sweat until onions are translucent.Add veggies, tomato paste, bread crumbs, parm cheese and seasonings to lentils.Mix and taste; adjust seasonings as needed.Add 1 egg and mix thoroughly.Spread mixture into loaf pan and cook for 60 mins at 350.While loaf is cooking, in a separate pan lightly saute remaining garlic gloves and shallot in olive oil.Add tomato sauce, salt and pepper to taste, and simmer over low heat.When loaf is done, top each slice with sauce and enjoy!Serving Size: Makes 6 hearty slices with sauce.Number of Servings: 6Recipe submitted by SparkPeople user SFHAGER.
