2 tbsp. nutritional yeast flakes
1 tbsp. lemon juice

1 14.5 oz. can crushed tomatoes
1 tsp. Italian seasoning
1 pkg. frozen spinach
4 oz. soy cheese shredds


How Do I Make Mama's Lasagna?

Here is how you make Mama's Lasagna:

Cook lasagna noodles according to package directions. Meanwhile, break up tofu with a fork. Mix nutritional yeast, lemon juice, and salt into the tofu. Thaw the spinach in the microwave, then drain. Mix the tomatoes, Italian seasoning, and spinach. Spray a 9 x 13 inch baking dish with Pam olive oil cooking spray. Heat oven to 350 degrees. Spoon a layer of tomatoes into baking dish. Follow with a layer of drained lasagna noodles, then a layer of tofu mixture. Continue layering until you have three layers. Top with the soy cheese.
