Here is how you make Lentil Bolognese:

Heat pan over low heat, add oil and garlic. Cook until golden brown. Add all chopped vegetables except mushrooms. Increse the heat to medium and cook, stirring occasionally, for 10-12 minutes, or until softened and there is no liquid left in the pan. Add mushrooms.Increase the heat to high and add the wine. Cook for 2 minutes.
