1/2 cup Old-Fashioned Rolled Oats
2 tsp Baking Powder

1 cup Blueberries, fresh or frozen (may use other berries)

Here is how you make Oat and Berry Muffins:

1. Preheat oven to 350 degrees. Line muffin pan with cupcake liners or muffin pan sprayed with non-stick spray coating.2. Mix milk, flaxseed & vinegar in a medium bowl and set aside for 5-10 minutes.3. Add maple syrup, applesauce, & vanilla & mix well.4. In another medium bowl, combine the flours, oats, baking soda, baking powder, and salt. 5. Add liquid ingredients to dry ingredients and stir just until mixed well. Add the berries and mix gently. 6. Fill muffin cups to 2/3 full. Bake until an inserted toothpick comes out dry (about 20-45 minutes).7. Let cool on a rack for a few minutes. Remove muffins from pan and continue to cool.
