Here is how you make Good Morning Muffins:

Preheat oven to 375F. Whisk flours, sugar, cinnamon, cardamom, baking powder and soda, and salt in a large bowl. Add carrots, pineapple and coconut and stir together. Mix oil, eggs, mashed banana and vanilla extract together in a smaller bowl and add to dry ingredients. Mix with a spoon until just combined(all dry ingredients are wet). Put into a pre-greased 12 muffin tin or use cupcake papers.
