4 tablespoons softened butter
1/4 cup sugar
1/2 cup (packed) light brown sugar
1 large egg
1 large egg-white
1/2 teaspoon vanilla extract
1.75 cup canned unsweetened pumpkin puree
1/2 cup golden raisins
1/2 cup chopped walnuts or pecans
1/2 cup applesauce

Here is how you make Mira's Low Cal Pumpkin Muffins:

1. Preheat oven to 400 degrees F 2. Spray muffin tins with non-stick cooking spray 3. Whisk together the flour, baking powder, baking soda, salt and spices. Set aside. 4. Combine 4 tablespoons butter and applesauce Beat together at medium speed until soft. 5. Add both the sugars and continue to beat until light and smooth. 6. One by one, add the egg and the egg white, beating for a minute after they are incorporated 7. Beat in the vanilla (Batter will be very thin at this point, it is normal!) 8. Mix in the pumpkin puree. Add the dry ingredients in a steady stream, mixing only until they disappear. 9. Mix in the raisins and nuts by hand with a wooden spoon. 10. Divide the muffin batter equally amongst the muffin tins. 11. Bake in the center rack for 17 minutes or until a knife inserted into the center of the muffins comes out clean. 12. Remove the muffins from the oven and let cool in their muffin tins for 5 minutes. Remove, and finish cooling on a cooling rack. 13. Enjoy!!
