Here is how you make Portobello Mushroom with Polenta:

For the Polenta: Bring the milk to a boil then slowly whisk in the Polenta. Periodically stir and add small amounts of water to loosen. After the polenta cooks (according to package) add 1 Tbsp of Smart Balance Light and 1/3 cup parmesan cheese.For the Mushrooms: Evenly spread the 2 Tbsp olive oil over the 4 mushroom caps. Lightly salt and pepper, and place on a baking sheet. Preheat the over to 375 degrees and place the mushrooms in the oven for about 15-20 minutes. When the mushrooms are cooked through and soft, place 1.5 ounces of the mozzarella cheese and place them under the broiler until the cheese is melted and golden.For the sauce: Add 1/2 cup marsala wine to a sauce pan and bring to a boil.
