Slice the mushrooms across, very finely. Combine the soy sauce, sesame oil, lemon juice and mirin, and set aside. Heat the olive oil in a small skillet and saute the mushrooms until soft, about 2 minutes. Remove from the heat and pour the soy mixture over the mushrooms. Stir well and allow to cool completely.
