In large bowl, combine cereal, flours, gluten and salt. Beat in water and egg whites, adding just enough water to make a stiff dough.Roll dough out on a well-floured surface (or between sheets of waxed paper) to 1/16" thick and allow to stand, uncovered, 1 hour. Using a pizza cutter, slice into 3" ribbons, then stack 5 strips on top of each other and cut crosswise into thirds.
