I've been making this hearty breakfast for years with my leftover apples. I love the nutty crunch and the sweetness of the apples and raisins. You can adjust the amount of raisins/nuts/apples to your liking, but remember to account for it in the nutrition. Walnuts are a super food so I wouldn't change the type of nut.
