Warm Olive oil in a fry pan, careful not to burn. Chop all the vegetables into small pieces. Blend eggs and water and salt and tip add to warmed fry pan. Cook for one minute until slightly set then spread the chopped in gredients over. Cook for a further 3 - 4 minutes and then carfully fold over the omlet onto itself. Cook on one side further 1 monutes and then flip. Yum and quick.
