-Since the recipe originally called for buttermilk, the first thing I do is get the two cups of milk in a container(or the original measurign cup is fine. Then add the lemon juice. The lemon juice is supposed to thicken or sour the milk. It won't get thick, by any means - but do this early in the recipe.- Next, in your batter bowl mix all the dry ingredients. - I add all my wet ingredients into the milk mixture then incorporate that into the dry ingredients. - Sometimes you may need to add more milk or flour to get the right consitency in your pancakes.
