4 cloves Garlic
1.75 cup Del Monte Diced Tomatoes, No Salt Added
1.5 cup cannellini beans (white kidney) - drained!
8 oz Healthy Harvest Pasta, Rotini
.66 cup Parmesan Cheese, grated
8 oz Gouda Cheese
.25 cup Bread crumbs, dry, grated, plain


How Do I Make Baked Pasta with Roasted Cauliflower and White Beans?

Here is how you make Baked Pasta with Roasted Cauliflower and White Beans:

Preheat oven to 400 degrees. Break cauliflower into tiny pieces - about 6 cups. Toss with oil and .5 t salt and roast in cast-iron skillet about 20-30 minutes - stir a few times. Meanwhile boil large pot of water add a pinch or two of salt. When cauliflower is done transfer skilled to stovve top over medium heat. Stir in garlic, cook until tender (3-4 minutes) then stir in tomatoes, their juices and beans. Cook until heated a few minutes. Remove from heat. Cook pasta until done (al dente). Scoop out cooked pasta and add it (draining it) to skilled. Stir in Parmigiana cheese and smoke gouda (or cheddar) taste, add salt as need. Top with brad crumbs. Return skilled to over. Bake until cheese is melted and bubbling and breadcrumbs are brown, 15 -20 minutes.
