Ricotta Cheese, whole milk, 1 cup
*Canola Oil, 2 tbsp


How Do I Make Summer's Bounty Pasta?

Here is how you make Summer's Bounty Pasta:

Cut squash into 1 inch chunks and toss in bowl with cherry tomatoes, canola oil and a sprinkle of sea salt (not in ingredients list). Arrange on cookie sheet with corn cobs (I used four cobs approximately 5 inches long). Roast at 425 for 25 minutes. In the mean time, set a pot of water to boil. After 15 minutes of roasting, add your penne to the boiling water. When pasta is cooked, reserve 1 cup of the cooking water and pour into a large bowl (this bowl should accommodate all of the ingredients). Place penne in bowl with spinach and ricotta, toss until incorporated. Strip the corn from the cob and add to bowl. Add squash and tomatoes to bowl and combine. At this point you can add some fresh herbs like thyme, rosemary, basil, dill.
