Here is how you make Tofu Pasta Florentine:

Preheat the oven to 400F.In a saucepan, combine crushed tomatoes, sun dried tomatoes, garlic powder, onion flakes, basil, thyme, oregano and nutmeg. Bring to a brisk simmer, reduce heat and cook 10 minutes. Stir in lemon zest and pepper to taste, pour about 2/3 cup into the bottom of a 2 1/2-qt covered casserole and set remainder aside.In a large bowl, using a potato masher or large fork, mash tofu with crushed garlic, lemon juice, salt, nutritional yeast and 3 tbsp of the vegan Parmesan until it forms a consistency similar to ricotta cheese. Fold in spinach and reserved tomato mixture and set aside.Cook pasta 7-8 minutes in boiling, salted water (will still be slightly crunchy). Drain and add to the tofu mixture, stirring well.Pour into the casserole. Cover and bake 40 minutes.Turn oven to broil, top pasta with remaining 1 tbsp vegan Parmesan. Cook 5 minutes longer.
