1 box penne pasta (or your favorite shape)

How Do I Make Vegetarian Mediterranean Pasta?

Here is how you make Vegetarian Mediterranean Pasta:

Cook pasta to package direction and set aside. Heat onion and garlic over medium heat until olive oil starts to shimmer. Add in onions and cook until about 3/4 quarters of the way done (slightly before they turn translucent). Add in olives, artichoke hearts, and cherry tomatoes, basil and oregano, salt and pepper. Continue cooking over medium heat until tomatoes "pop" and start to make a sauce. Add in spinach, let wilt. Adjust spices to taste. Serve over pasta. Top with parmesan cheese (or feta) if desired.
