Makes 6 servings1. Cook penne. Meanwhile cut zucchini into pencil width, 2 inch long pieces.2. Heat oil over medium high heat in a large, deep pan that will hold at least 10 cups. When hot, add mushrooms. Cook, stirring often until cooked, from 4-5 minutes. Stir in zucchini, spinach, tomato, onions and thyme. Stir fry until spinach wilts, from 2 to 3 minutes.
