Here is how you make LATKAS and APPLESAUCE (Potato Pancakes):

Makes 2 large servings, (about 8 to 12 pancakes):Wash potatoes well, and grate them into shreds in a large colander. With clean hands, squeeze out all of the liquid from the shreds, until satisfied that very little remains for about 2 minutes.In a large mixing bowl, beat the egg and add the potatoes, flour, onions, salt and pepper. Mix well.In a non stick skillet over medium high heat, add the tablespoon of canola oil and spread out with a spatula.Using a 1/4 cup measuring cup, measure out each pancake right onto the oil, and press downwards with the spatula. When pancakes are brown and golden underneath, gently turn over each pancake with the spatula.Serve hot when golden brown on both sides.
