How Do I Make Loaded Potato Skins?

Here is how you make Loaded Potato Skins:

Pierce potatoes all over with a fork. Place in the microwave and cook, turning once or twice, until the potatoes are soft, about 10-15 minutes. Let cool. Cut potatoes in half and scoop out the insides into a medium bowl. Add 2 tablespoons of yogurt and 2 tablespoons of cheese. Stir to combine and set aside.Wash and drain broccoli. Put in a microwave safe bowl, cover and microwave for 5 minutes or until soft. Add soy crumbles to broccoli and microwave for an additional 2 mintues. Add broccoli and soy crumbles to the potato mixture and stir to combine. Divide mixture between the four potato halves. Top each half with an additional 1 tablespoon of cheese. Reheat in microwave for additional 2 minutes or until hot. Top with remaining yogurt and serve immediately.
