Bob's Red Mill TVP, 2 cup
Hunt's Ketchup, 2 tbsp
Olive Oil, 2 tbsp
Potato, 6 potatoes diced
Onions, raw, 1 medium (2-1/2" dia)
Carrots & Celery
Garlic, 4 clove
Celery Salt, 1 tsp
Salt, pepper, oregano, thyme, & sage to taste
Cheddar Cheese, 1 cup, shredded, optional
Salsa (optional)


How Do I Make TVP Potatoes?

Here is how you make TVP Potatoes:

Combine TVP with 2 cups boiling water and ketchup in a small mixing bowl and set aside. Heat oil in a large skillet over medium heat. add potatoes and cook, stirring costantly, until tender, 5-10 minutes. Add the onions and squash and continue cooking 5 minutes or until almost done. Add garlic and seasonings and continue cooking 1-2 minutes. Add TVP and cheese and stir 1-2 minutes or until cheese is melted and well distributed. Top each serving with salsa if desired.Note: I used the yellow summer squash because I happened to have some on hand. Feel free to use whatever veggie(s) works for you. 5/2014Note: I have updated this recipe, taking out the squash and using carrots & celery instead. Have also removed the cheese from the calorie count as we sprinkled it on at the table. Portion size is generous on this one since it is an all-in-one meal.
