-Saute peppers and onions in EVOO until caramelized and soft. Set Aside.-Microwave or bake the white potatoes until soft, unpeel the potatoes when done. Set aside.-Beat 6 large eggs until fluffy, (I add a little water to make them fluffy) and then scramble.-When eggs are done combine the peppers, onions, potatoes and eggs.Serve with salsa, hot sauce, avocado, or on a bagel!
