Reduce heat and simmer, stirring occasionally, until oats are done about 20 minutes for steel cut oats, around 5 for old fashioned. Top with pumpkin seeds and serve with milk if desired. The combination of the pumpkin and dried fruits makes it sweet enough so you don't really need to add a sweetener, but if you'd like try adding some maple syrup as an all natural sweetener.
