Here is how you make Debbie's Ratatouille:

Chop onions, mince or chop garlic & saute on medium in a large pan. When the onions begin to soften, add red pepper. When the red pepper begins to soften, add eggplant and zucchini. Cover and simmer on medium for 25-30 minutes, stirring occasionally until the eggplant and zucchini begin to soften.Add the tomatoes, cover and simmer another 25-30 minutes, stirring occasionally. I add lots of salt and pepper along the way, its up to you. If you have fresh basil, add a hand full at the same time you add the tomatoes.
