1 quart vegetable broth (I use homemade - no salt!)
1 onion, chopped
2 onions, sliced into rings
2 T. olive oil
dollop of plain yogurt

Here is how you make Lebanese Lentils and Rice with Carmelized Onion:

I did not measure exactly, but this makes approximately 4 one-cup servings. 1. Peel and chop one of the onions; slice the other two into rings. 2. Saute the chopped onion in 1 T. olive oil.3. Add the spices, lentils and broth. Simmer on medium heat for 10 minutes.4. Add the rice and return to a boil. 5. Simmer until rice is tender and fluffy. 6. Serve with a dollop of plain yogurt, if desired. Good with a salad of tomatoes, green onions, cucumber and parsley on the side.
